Fried Egg and Bean Salad.
An easy, light lunch. Just fry 1 or 2 eggs and serve with bean salad. I like my egg fried on both sides and seasoned with pepper :-) The recipe for bean salad can be found here.

Grilled Sandwiches (Veggie-mix & Mozzarella + Green pesto & Mozzarella).
Veggie-mix & Mozzarella ingredients
2 slices of bread
1/2 tomato
a few slices of cucumber
1/2 small paprika
some grated mozzarella (~1-2 tbsp)
Salt & pepper
Butter
Dice the veggies. Mix them in a small bowl with a pinch of salt and pepper. Spread some butter on the bread, sprinkle the grated mozzarella and add the veggie-mix.
Green pesto & Mozzarella ingredients
2 slices of bread
some grated mozzarella (~1-2 tbsp)
Green pesto
Butter
Spread some butter on your sandwiches. Sprinkle with mozzarella and add the green pesto.
Cook your sandwiches in a toast iron. If you don’t have one, be creative :-) In the oven? On a frying-pan?
Note: on the picture, my sandwiches are not cooked.

Spicy Lentils-Lasagna and Bean Salad.
Alright, going to be honest here. I don’t have the recipe for the lasagna. I just took what we had at home, but I’ll try to describe it in case anyone else wants to give it a try (or be inspired)!
Spicy Lentils-Lasagna
Ingredients
Pasta plates
Ready-to-serve Green lentils (? or maybe it was red.. I can’t remember)
Crushed tomatoes
Chili
Garlic
Onion
Light creme fraiche
Carrot
Spinach
Béchamel sauce
Salt and pepper
How to:
Rinse the lentils in cold water. Dice the onion, carrot and garlic and fry it with some oil in a frying pan. Add the crushed tomatoes and chili. The creme fraiche is meant to be used if the chili got too strong, it will round of the flavor :-) Add the lentils. Allow to cook for about 5-10 minutes. Season with salt and pepper if you wish.
Heat up the béchamel sauce (I used a pre-made one) in a sauce pan, bringing it to a boil. Let it then simmer for about 5 minutes.
I used frozen spinach. If you do too, put the frozen spinach in another sauce pan on medium heat and cook until it isn’t frozen anymore ;-)
When everything is ready, layer the lentils with pasta plates, béchamel and spinach. Put in oven (200°c), 20 minutes. Serve :-)

Stuffed Avocado (Raw)
Ingredients
1 serving (or 2 small)
1 ripe avocado
2-3 tsp low fat creme fraiche
Red onion
Salt & pepper
How to:
Cut the avocado in two and take out the stone. Fill the hole with low fat creme fraiche, sprinkle with some minced red onion, salt and pepper. Ready to serve ;-)

White fiber pasta with spinache sauce and broccoli.
Ingredients
~ 4 portions
Pasta (as much as you’d like, and any kind you want)
1 cup Spinach
1/2 cup Creme fraiche
Some cheese (I used mozzarella, but I think parmesan would be nice too) ~15 g
1/4 cup milk
A garlic clove or some garlic powder
Red pepper
Chili powder
Salt & pepper
How to do it
Now, you can make this as easy or as complicated as you want. I made this all up while cooking (that’s how I like it, making up my own recipes) and therefore didn’t really measure to well.
Bring some water to a boil and add the pasta. If you’re using frozen spinach, heat it up in a sauce pan. When melted, add the creme fraiche and milk. I used low fat chili&paprika-flavored creme fraiche but if you’re having regular, just add some red pepper and chili to it. Fresh, frozen, powder.. whatever floats your boat ;) Add some garlic if you want. I just happened to find a jar of dried garlic and added some. ‘Cause I like garlic. Sprinkle with cheese (as earlier mentioned, I used mozzarella ‘cause that’s what we had in the fridge) and stir ‘til it’s melted. Season with salt and pepper if needed.
And the broccoli! I used frozen. Put them in another sauce pan, almost cover with water, bring to a boil. Let it boil ~2-3 minutes, then let ‘em have a cold shower.
Serve!
